The distinction between pumpkins and squashes is a very, very fuzzy one. Pumpkins and other winter squashes are all the same species (with possibly a very few exceptions), and the flavors and colors of all of them are quite similar. So is it true pumpkin pies are made from squashes? Yes. All are made of squashes, and some are made from squashes that are not called pumpkins (although there are such things as sweet potato pie and carrot pie that are pumpkin-pie-like, but contain no pumpkin—but nobody calls them pumpkin pie).

A pumpkin IS a squash.

Pumpkin in a can is usually butternut squash.

The FDA has no definition of what a pumpkin is so canned pumpkin is often any one of a variety of squashes.

My mom uses butternut squash. It’s creamier than pumpkin.

Well, my grandmother used to make pies out of butternut squash. Similar taste but I found the texture a little different.
