It’s all in the pan. I fry eggs every morning and rarely break a yoke. A good pan, plenty of butter and the eggs slide right out. Nothing better than sunny side up.
Over easy is best done with a good pan and a thin turner/spatula. Though, if you have enough bacon grease in the pan, sunny-side up is easier. Just splash the hot grease gently over the yolks to firm up the outside a tiny bit.
I like mine over medium-well. Cooked white and partially cooked yolk (still soft and sticky-not runny.) But try ordering that out. Usually they come over easy (hot/practically raw) or so well done they are like hockey pucks.
One of those ironies: My wife makes the BEST liver and onions I’ve ever had. I know many of you don’t like it but some of us do, my wife included in the former, she absolutely HATES liver and onions.
How come none of the earlier posters mentioned the purpose of his toast? He likes to sop up the runny yolks with pieces of toast. I like to do that, too, with soft yolks. Yes, the whites can be done while the yolk is still soft.

I can’t stand uncooked egg whites. I usually do mine over medium. If the white is runny it’s disgusting.

I usually fry 3 eggs at once and inevitably I will break 1 of them and 2 end up over medium and the other over hard

I love runny yolk. Cooked yolk is just a flattened hard boiled egg.

interesting thought, Arlo. There is indeed irony in Janis’s comment.

You can’t cook eggs properly in anything but a cast iron pan.

Ugh! A hard yolk only belongs chopped onto a salad or in an egg salad sandwich.

Over medium eggs work well when mixed with grits. My first wife would dip french fries in the yolk,

I like my eggs “fried hard with the yolks broke.” Can’t stand runny whites!

I prefer to have my eggs scrambled, coddled, or hard boiled…. or in a fritata. Other forms…. not to my liking.

Is it just me, or do those eggs look sunny side up and NOT over easy?

Eggs taste like something that comes out of the rear end of a bird. Sulfur!
