If a person who doesn’t want any pink in their steak is smart, they’ll order it medium-well: cooked through with juice. I managed steakhouses for many years & explained it this way to our customers. One time a customer ordered a steak extra well done, (she actually said extra 14 times!) no pink at all. Some restaurants will cook the crappiest steak they have for well-done orders. Besides, the red is myoglobin, a protein, not blood.
An individual’s decision as to what pleases their taste buds has absolutely no connection to his taste in other matters or class. Anyone who is eating a piece of meat that still moos because they have been convinced that they are inferior to someone who prefers it well done needs to get a backbone.
Sam T53 is right on target. The steaks have been properly bled. If that is a concern, there is no reason to avoid anything from steak tar-tar, (delicious pre cooked [raw] steak) to Medium. Ground beef is another story, usually medium to medium well for me on burgers.

Once you cook any steak past medium rare, your not going to be eating ‘steak’. What you’ll be having is roast beef. But each to their own.
