It’s not real chili if it has beans in it.

Memories of road kill chili from my days on the rodeo trail rides. No beans and plenty hot.

Judging by the way Janis is chowing down on that chili I wonder if Arlo’s secret ingredient is legal in their state.

Just like it isn’t a hot dog if you put ketchup on it. It’s criminal!

I’m not going to argue the beans, no beans, but my chili has won several contests. My son’s Jeep club was ata big show with clubs from all over the country, they had a chili cook off. My son took second place out of over 50 entries, his was Hormel no bean chili straight from the cans. He owned up to it and they had a big laugh over it. My point i, chili is what you say it is and everyone has an opinion.

My {NJ] recipe for the dish goes like this 1 tbls cumin, 2 tbls chili powder, 2 tbls crushed red pepper, 3 multi colored [1 red, 1 yellow, 1 green] bell peppers, a fresh habanero, a can of tomato paste, a 28 oz can of diced tomatoes, and 2 pounds of ground chuck, 8 hours in the crock pot and serve it over corn chips, elbow macaroni or Goya black beans, your choice.

“Most historians agree that the earliest written description of chili came from J.C. Clopper, who lived near Houston. While his description never mentions the word chili this is what he wrote of his visit to San Antonio in 1828: "When they [poor families of San Antonio] have to lay for their meat in the market, a very little is made to suffice for the family; it is generally cut into a kind of hash with nearly as many peppers as there are pieces of meat—this is all stewed together.”

All-y’all know what? The recipes for chili and potato salad are like fingerprints; everybody has them and nobody’s are alike and anybody can say theirs are the best!

I usually add red kidney beans because that’s how my father made chili. The last time I made chili I used black beans and it was really good. Next time I’m going to add some whole kernel corn with the black beans.

First time I ever saw chili was at a party at my husband’s girlfriend’s house. (We were not married, but engaged at the time. – I knew she would not last and I would.)
