    There’s a fascinating section on sourdough in Never Home Alone: From Microbes to Millipedes, Camel Crickets, and Honeybees, the Natural History of Where We Live, a 2018 book by naturalist Rob Dunn. His basic premise is that we are inevitably awash in microbes for 100% of our existence on Earth and that it makes better sense to try to cooperate with them than to go to war with them. (Seems like there might be a larger lesson in there somewhere too.)
