Wonder why Mrs Enjo hadn’t thought to make zucchini muffins herself straight out of her garden instead of going around the neighborhood to give the vegetable? They are plenty of zucchini recipes.
I had zucchini spirals (“spagetti”) with pasta sauce for dinner this evening. I love it. Never had so much zucchini in 1 season since getting a spiralizer gadget.
I loathe zucchini. That said, my bff’s father made a mince (ground beef) dish with it that I did like, haven’t had it in many years, though I did find a recipe that was similar. I may torture my family with it someday ;)
Zucchini cookies were always a hit at home and at school. I remember people actually trying to trade me various things from their lunches for the zucchini cookies I brought.
Having said that , I think Elly above would have done better making a ratatouille instead of a zucchini based casserole, which I could see being very bland and colourless on its own. A nicely made ratatouille will, as the cartoon movie hinted at, make you smile :)
I can take it or leave it. I’ve had awesome zucchini bread and some that was pretty awful. I like it raw and crunchy and cut up in a salad. I’ve not had a casserole made well enough to be palatable although I know there are some good recipes out there. Maybe I just don’t associate with the right cooks.

My Mom used to make zucchini bread. Sort of like banana bread I think. Frankly, I just slap some butter and jelly on it and call it a day.
