My wife fixed some salmon for dinner. Turned out to be a smaller serving than she wanted, so we each also got a nice fried egg. When I got out the (medium) hot sauce out, for the egg, she got really big eyes and said “You’re going to put hot sauce on the salmon‽” (PS: The salmon was tasty, as was the sauced egg).
I was going to say that Opal would be crying over what Earl’s doing to the eggs but then I remembered how I feel about eggs and any way to bury those things deep and outta sight is an improvement. I’d rather have toast and butter.
It is a state law in Louisiana – hot sauce or some kind of sauce goes on everything – period. Even if it starts crawling off the plate, stab it, and pour more hot sauce on it.

Too many cooks get addicted to excessive hot sauces and spices. You can detect a lost soul when he serves cinnamon rolls with habanero and cilantro icing.
I wonder if people who use hot sauce a lot of their food don’t actually taste the food and that’s the only way to taste anything… if I put hot sauce on something, or if there’s too much pepper in my soup, that’s all I can taste.

The store-bought stuff just isn’t hot enough. Need a good ghost pepper or scorpion pepper sauce. Tread lightly for beginners.
