I have just found out ‘rabbit food’ stops you losing bone density, lack of vitamin K2 not calcium is the cause. Vitamin K2 is in green leafy vegetables.
On the other hand, if you must take blood thinners to maintain a normal clotting level, dark green veg, which are high in VK, are to be avoided because VK thins out the blood even further, risking excessive bleeding from even small cuts.
Personally I miss both those veg and spinach and asparagus, too, but I prefer living to the alternative, which will come soon enough.
Kale is great when cooked with some smoked ham but that’s a lot of work for a vegetable. The only restaurant that I know of that serves it is Cracker Barrel, so I always order it when I eat there which isn’t often.
Grilled Brussel sprouts can be quite good. I have never had Kale that I liked and yet I hear about celebrities eating it all the the time. So clearly Kale has the better publicist

Young sweet kale in a salad is delicious! Brussle sprouts, I can do without, same as cabbage unless it is transformed into sourkrout!

I used to hate Brussels sprouts… until I got some grilled ones, not the overcooked or boiled ones I used to get. Yum!
