That’s what I hear about everybody not liking lengua. I’ve tried it in a burrito and it is not that bad. It just has to be prepared just right like any other cut of meat, offal or not.
The first time I ate it, I thought it was roast beef. I don’t care where it’s been, if it tastes good I’ll eat it. I still remember eating goat in High School. Mmmm, tasty.

I had it once, it wasn’t bad. Texture like bologna. And my Momma from Missouri didn’t call it lengua ;)

I’ve fixed it, it is REALLY good! You have to get past the outer skin part with the goosebump looking things, I hate touching it! Wear gloves…

Lengua makes a great sandwich on Rye with spicy mustard and maybe a bit of horseradish.
A slice of Swiss cheese goes well, too.

I worked at a small resort hotel which served tongue Yuk!
