Pizzadillas. Tortilla, sauce (pizza, spaghetti, or sweet chili), whatever veg / meat you have around (we like mushrooms and pepperoni), shredded mozzarella. Fold in half, cook in non-stick pan until cheese has melted and tortilla is crispy. Cut into wedges. Serve with salsa, sour cream, and / or guacamole, depending on what is in the fridge. Easy and delicious.
I remember working the night shift at a grocery store and wandering around the aisles, trying to pick something for coffee break, and thinking “Sigh, there’s nothing to eat!”
Around here we have that conversation at least once a week. Same old same old, chicken, steak, pork, or pasta. Sometimes I think we’re too tired or lazy to prepare a meal. That’s when Door Dash comes into play.
I knew a woman who bought the exact same things, every week and prepared the same meals, every day. I would go mad! Gag. It’s soothing for some though.
PIZZA TATER! Microwave baked potato. Put on a microwave safe plate after it is cooked, cut open, and smoosh flat on the plate. Put your favorite pizza toppings, or whatever you have that would be good on a pizza, heat in microwave until sauce is hot, cheese is melted and toppings look good. Eat.
Another sharp poster above got this first, but my go to is ice cream. I never understood why people found fault with ice cream for a meal. After all it’s just milk, ice and flavoring. May contain coco, fruit or yogurt. No sugar or fat involved I’m sure…..
