The buttermilk you buy in the supermarket is arguably not “real” buttermilk.
Traditional buttermilk, the liquid left over from churning butter, had a distinct tangy flavor because naturally-present bacteria were allowed to ferment the milk before churning. (Apparently, turning lactose into lactic acid helped separate the milkfat from the protein.)
From what I can tell, modern commercial butter, “sweet cream butter”, is made from unfermented milk. The “cultured buttermilk” sold in stores is made by adding specific bacteria to low-fat or whole milk to simulate the flavor of traditional buttermilk.
Even today just the thought of buttermilk creeps me out. I had to drink it in lieu of a penicillin shot (never could figure out why). It turned my stomach—literally.
Should we believe Mr. Graziano, or Wikipedia? Not sure. But the Jack Daniel story is questionable. From Wikipedia: Daniel died from blood poisoning in Lynchburg on October 9, 1911.1 An oft-told tall tale is that the infection began in one of his toes, which Daniel injured one morning at work by kicking his safe in anger when he could not get it open (he was said to always have had trouble remembering the combination).9 However, Daniel’s modern biographer has asserted that the story is not true, offering evidence that Daniel raged on the safe a few years before dying of unrelated gangrene.12
