    Why, there are leftovers because I doubled the recipe. There was just too much to eat in one meal. What other reason could there be? So, casserole for dinner tonight or lunch tomorrow? Hey, why not both?

    My wife will save every last scrap of left over food, put it in the refrigerator then forget it. I’ve started to use it for lunches at work. It saves time and money and is usually pretty tasty.

    I make leftover soup. Just throw everything in a pot and add broth. Big problem though, is when it is really yummy, you can never make it the same way again.

    I like leftovers and am happy that I don’t have to cook another day, or someone can use them for a lunch. We’re going to have an empty nest in a few years, so my husband better learn to like them too.

    I lived on casseroles in college. Make a large amount and eat for days. Noodles of some sort, ground beef, cheese, soup – yummy fresh and later on. Don’t even have to reheat. Gladys I’ll take what Brutus doesn’t want!
