    Are we finally getting an answer to what kind of tongue is in the casserole? Or was the cow just easier to draw in this case? Beef tongue is great.

    Years ago, when my girls were not even teens yet, I brought home a lengua from the Mexican Grocery store near my work.

    I got it all sliced up early one Saturday morning, so it’d be ready for lunch when I got back from a quick fishing trip.

    Well, when I got back home, my lengua had gone hasta la bye-bye, and my 2 girls said, “Hey Dad, where’d you get that meat? Can you get some more? It was GOOD!”

    Ever since I saw it mentioned, I have been wondering just how good, or bad Tia Carmen’s Casserole really could be.

    why is it called a casserole if she’s cooking it in a stew pot? A casserole is usually put in a pan and baked, isn’t it?

    So is beef heart. My mother would wait for the butcher to get a really big one and then she would stuff it. Boy it was good.
