I don’t worry about the type of fat—I eat butter all the time, cook with olive oil, and occasionally cook with lard (tamales anyone?)—all for the flavor they offer. Even a cursory look through medical books reveals the industry’s use of arbitrary, or subjective measures or estimates and qualifiers such as the term “…at risk of…” . A careful reader can spot these. Remember: eat right, exercise die anyway. Happy trails!
