I try to replace recipe items with equivalent āhealthyā subsitutes whenever possible. Since I have Hypertension, Iām supposed to restrict my intake of sodium, sugar and fat which come in many forms, especially when baking. For example baking soda is sodium bicarbonate. Baking powder is loaded, too. I buy calcium carbonate to replace baking soda and Featherweight Baking Powder which is also sodium free. I replace sugar with Stevia. Stevia even has a brown sugar-stevia combo. I make a awesome pumpkin bread and I donāt feel guilty eating it.
If you are trying to make something low-carb, donāt try for low-fat at the same time. You might as well just eat protein powder at that point. Nothing else is left.
I have made some keto baking recipes with almond flour and sugar substitutes for my diabetic husband. Some were flops, but others the whole family enjoyed. Maybe not as well as the real thing, but take your wins where you get them.

Actually not all that bad. But oat flour would be better. And low fat margarine wouldnāt work since itās only there for the fat content!

Gluten free? Some GF foods arenāt bad. But thereās no reason to add sugar free and low fat into the mix.

Wonder if Jon is looking for a recipe where he might actually get to eat the cookies instead of Garfield scarfing them all?

Get Alton Brown on the scene. STAT!

It could be tweaked and made semi-decent, but I doubt Jon has actually done his research.
