    My family had a tradition—leftover turkey was vacuum sealed until New Year’s Eve when it would be defrosted and made into turkey enchiladas as the centerpiece of a Mexican themed dinner.

    I found out, in my late teens, why my mother was such a good cook … boredom! She was tired of preparing the same stuff over and over, so she got different cookbooks and, once or twice a week, would experiment. Sometimes the experiments were successful … sometimes they weren’t.
