Just watch Nick Stellino and Alton Brown!

2 totally different methods of cooking but if you average then out, the results are to die for!!!

I usually have the ingredients. He has no spice rack?

I mean, if the recipe is for something called “Chicken a la Bert Lahr,” you probably have to get some chicken, but that can’t be what he means.

And the recipe is good to start from and adjust. Nobody measures precisely 3/8ths of a cup.

    So, improvise and adapt!

Don’t have a half-cup of minced wombat spleen handy, and none of your neighbors have any to lend? Don’t worry. Diced badger liver is a fine substitute, and everybody has that in the fridge these days.

Cooking doesn’t have to be hard.

Oh this is sooooooo true. I’ve taken recipes that say it should only take (pick a number) of minutes. They obviously chop and dice quicker than I do because a half hour past their time I’m still in the preparation phase.

I didn’t notice him saying he was using the recipes. He just commented on the fact that he doesn’t have the ingredients on hand that the article says everyone has.

In my kitchen, you have to allow an extra hour for “I know I had some of that…now where in the pantry/fridge/freezer is it buried?…how many years past its expiration date is it still OK to use?…”
