They used to carve turnips as pumpkins are new world. Interesting fact, farmer’s could over winter animals by feeding them turnips instead of slaughtering in fall. Turnips were a big deal.

This may refer to gaining knowledge from the ancestors.34 Acallam na Senórach (‘Colloquy of the Elders’) tells how three female werewolves emerge from the cave of Cruachan (an Otherworld portal) each Samhain and kill livestock.
