Every year my father would come home from the office Christmas party with a fruitcake the company always gave out (the cheap store-bought type). As soon as he’d set it down, Mom would throw it in the trash. Kind of a holiday tradition at our home.
A good fruitcake, properly re-brandied at intervals, can serve as a festive re-gift for years. It may even offer future archeologists an insight into our glacéd fruit culture.
I’m thinking about making my mother’s old recipe for icebox fruitcake. It’s fantastic. A luscious torte of fruit, pecans and a little bit of sweet cookie filling. Let it sit in the fridge for a night and a day and its ready for consumption.

One of my sisters-in-law once set out to make a really Great fruitcake from a recipe she got from a friend. It called for soaking the Fruit in Bourbon for a few months. So, she got a batch of top quality dried fruit, a bottle of premium bourbon and put it into a container and stuck it in the back of the refrigerator.
When it was time to bake the cake, she pulled out the container, opened it and found 3 small pieces of fruit and a couple tablespoons of Bourbon left.

My wife’s aunt makes a delicious fruit cake almost as good as my mums.
Store bought ones are generally rubbish which is why the fruit cake myth got started!

A good fruitcake is simply a spice cake with pieces of cherries, walnuts, orange, raisins, and a good bit or rum. They’re delicious.
