    Charlotte has baking soda instead of powder. Also, that butter doesn’t say if it’s unsalted or not.

    Who uses unsalted butter in biscuits? You only really need unsalted butter for baking when you really don’t want salt, which is honestly almost never. They are adding salt!

    The recipe calls for baking powder, but she has baking soda on the counter. That is what is wrong.

    Well, at least she will learn the difference between baking soda and baking powder first hand! It’s acid btw. Baking powder has it, baking soda doesn’t. The acid is the thing that activates the sodium bicarbonate and makes it foam and bubble because it creates carbon dioxide, thus allowing the batter to rise and become fluffy and airy. In recipes that contain baking soda, there is usually an acidic ingredient as well, e.g. sour cream or simply baking powder as well and the soda is added to make the effect stronger.

    A tiny amount of backing soda can be used as a substitute of backing powder. The flavour is a little different and the leavening is less. But still good.

    Before I arrived, Mom cooked Spanish Rice for the first time. The recipe called for 2 cups of cooked rice. Guess how much rice she made? :)
