From Daily Meal: Before the kale craze began, America’s largest buyer of kale was not health food stores or eco-conscious vegan restaurants. It was Pizza Hut. Yes, Pizza Hut in all its cheesy, greasy, meaty glory. And the reason why the chain purchased so much will surprise you.
As Healthline reports, though raw kale can negatively affect certain bodily systems for some people, overall kale lives up to its superfood reputation, packing impressive amounts of nutrients including vitamins A, B, C, and K, minerals like calcium, potassium, magnesium, copper, and manganese, and protective antioxidants — but that’s not why Pizza Hut was buying so much of it. Their reasoning was more about the aesthetic.
Kale was used for decorative purposes on the salad bar at Pizza Hut, but it was not originally intended to be eaten. It was meant to be a frilly green garnish, and a lacey disguise for the ice that kept the food there cold, according to Today’s interview with a Pizza Hut spokesperson — with some 14,000+ pounds bought in 2012 alone. Nowadays you’ll find kale in everything from salads to smoothies, transformed into dishes as wide-ranging as hearty soups and air-fried kale chips. There are restaurants named after kale and ironically, places that serve kale-topped pizza.
I am not worried about how long I live. But I do NOT want to end up in a nursing home. I spent decades visiting people in nursing homes (worked at one for five years), and I do NOT to die in one. Number one reason people end up there is immobility — legs no longer working well. That’s why I work out — to keep my legs strong. Also reduces likelihood of stroke, another big reason people end up in nursing homes. I don’t mind dying, but don’t want the slow death of a nursing home. Also, I do enjoy feeling good and still being able to move with relative ease so I can go hiking and that sort of thing.
I’m generally a happy and healthy person, but I have to admit that sometimes, my motivation to live longer is just to see how much worse things are going to get.

As a Boomer I can answer this. We watched our parents and grandparents lose their mobility and strength until they were bedridden or worse. We aren’t so much trying to live longer, we are trying to keep moving and being independent as long as we can be.
As s rookie engineer, I complained about smokers in our office and got the duty to solve the problem. I notified them (when they needed a fix) to do it in the back staircase. The executives were located at the top of the chimney, but, alas, I wasn’t noticed anyway.
Actually, “Kale” is not in itself – an edible vegetable – when I first encountered it, the “salad” bars were using it to accent the “real” salads – not so much, anymore – of course I’ve not visited any establishment that provides a salad bar since the Covid-19 pandemic – so I really don’t know what they’re doing, now…
I like “salads” and, in fact have at least one every day – and, no, it’s not usually “iceberg” lettuce – it’s usually romaine and assorted other greens – but I still maintain that “kale” is STILL best used as “roughage” for animals…
