Arlo: It's past time to make some chili! Don't you think? Janis: Oh, yummy! Janis: But not too spicy, OK? Arlo: OK! Janis: And not too much onion and pepper - they don't agree with me these days! And not too tomatoey! All that acid! And NO beans, PLEASE! Does it have to be red meat? Grease, you know... Arlo: Chicken soup coming right up.

My wife has a great recipe for chili con carne. It makes about 20 servings, so I put most of it in freezer bags (let it cool below 170F first).

My cousin makes a “white chili” and Arlo’s right, it’s basically chicken soup. Nothing beats real chili on a cold day, I say go for it Arlo. I’ll bet she’ll want some once it’s made.

Local Mexican restaurants have a dish called Chili Colorado, grilled steak pieces with a very spicy sauce. Degree of heat depends on place. Sauce is great for scooping up with tortillas.

I particularly liked a “San Antonio Chili” I had a few years ago. It was basically a really nicely flavoured chunky meat sauce.

Janis would not approve. I, on the other hand, would gladly join Arlo in demolishing a pot of it.

If the chili (spice) is potent enough, you might substitute turkey for beef, but I could tell the difference because of the texture of the meat. If it is within the bounds of flavor rather than pain, (still taste the meat), the difference will be obvious. Chili con carne is a stew, not a soup. The beef should be diced, not ground, and beans are a side dish, not part of the chili. The beans may be whole pintos, possibly with grated cheddar, or mashed and recooked (frijoles refritos) with a modest amount of onion (wild onion is best because its more subtle flavor doesn’t overpower the bean) served with corn chips or rolled in a tortilla (yellow, most white corn is frankenfood these days).
