It was tight growing up and as a young adult, so ate baloney sandwiches a lot. About every 3-5 years, get a hankering for grilled baloney sandwich. So I will buy just a few slices, grill them (and make slices in them when it starts to bubble), put them on low carb bread with some cheese and grill it.It’s pretty good but I only get the desire very rarely.
My dad put ketchup and peanut butter on his baloney sandwiches. Sounds strange but it was probably the 1960s WASP version of Thai peanut sauce. At least it wasn’t jello.
Mayo, sweet pickle relish and a lot of lettuce on almost any flavor of bread. Protein optional, as I discovered that time I’d almost finished eating the sandwich before I realized I’d forgotten the lunch meat. Often wondered if it went unnoticed because I was watching TV at the same time.
My tummy expects certain tastes… ketchup with bologna, untoasted white bread; mayo w/ balogna on white toast; mustard on grilled cheese san, etc. Sometimes my late night snack is a slice of cheese on a slice of Bologna on white bread w/ketchup, broiled until the cheese is browned.
I haven’t eaten bologna in so long I don’t remember what I put on it. Use to like bologna and hot dogs, now can’t stand either. I remember my Dad making fried bologna sandwiches for lunches when I was younger and I think we put ketcup on them.
Bologna is pretty much just a very large hot dog, sliced, so ketchup on a bologna sandwich is pretty much the same as ketchup on a hot dog (though that is considered sacrilege to some)
I remember Moe of the Three Stooges preparing “Honey and ketchup! There’s nothing better than honey and ketchup, except baloney and whipped cream, and we haven’t got any.”

Run bologna, sweet pickles and onion through the meat grinder then mix in some mayo and you’ve got southern style ham salad.
