    Makes it tough to draw down on space in the refrig when the wife doesn’t like to eat left overs but makes lunch for three five days a week. Try as I might I just can’t keep up.

    He is married with grandkids. Like any family it accumulates leftovers quickly. As someone who gets by on Purina Bachelor Chow, I don’t have that problem.

    For close to 30 years I made Thanksgiving dinner for both families. (Being of two different religions – same is the only family meal type holiday both families wanted us for and this was our solution.) We only stopped after we had bed bugs and don’t feel comfortable having ANYONE but us in our house any longer.

    Even now I don’t have to clear out the freezer for leftovers. I make more than enough for the two of us for the holiday. Husband (luckily) loves leftover turkey which helps when there is a full turkey for 2 people – he will even eat for lunch. Most of the food other than the turkey will be used up within in 2 or 3 days. Pies will last 8 days as we each like a different pie and I make both. We have them for our late night snack and use them up. There will be a box of stuffing. Sweet potatoes for him. Mashed potatoes from mix also. Green beans or corn (not decided yet). Based on prior years all but the turkey will be eaten (mostly for dinners) by Monday as I cook as little as I can to use it up. By the middle of next week I will have frozen the leftover turkey in portions.

    Recently I had started making for dinner on Sunday nights chicken and stuffing bake, a variation on turkey and stuffing bake we had been buying frozen at Walmart – but they discontinued (and just brought back for the season – have 4 boxes of same in freezer) and I look forward to using the Thanksgiving leftovers to make the turkey and stuffing bake instead of using chicken in same.
