    Sundays are pancake days. Have a waffle iron , haven’t used it in years. Hubby wants to get a Belgian waffle maker. Something else to put on the shelf .

    What is so flipping hard about waffles? Flour, baking soda, eggs, buttermilk. Mix together in a bowl. Pour into iron. But that said, I buy pre-made. Threw my waffle iron away in rage after the hundredth second degree finger burn.

    You mix yeast waffles the night before and clean up the mess. Nothing but the bowl, waffle iron, and ladle for the next morning.

    We had homemade Belgian Waffles using that Belgian waffle mix last week. They made a delicious dinner but next morning both of us had elevated levels on our blood sugar readings. We obviously can’t make the waffles a regular thing but with some extra exercise and a careful diet that day, I think we can repeat them sometimes.

    The hardest part is getting the waffle iron out of the back of the cupboard after moving several other things out of the way. Pancakes are much easier.

    I mix up the batter, then heat up the waffle baker. When the bacon or sausage is almost done on the stove I pour the batter, & a minute later breakfast is served.

    Bah! Waffles are easy. I used to make ’em from scratch about once a month and froze them for week day toaster waffles. Measure our all your ingredients ahead of time, combine dry ingredients together, combine wet ingredients, add wet to dry, mix until just combined, and let sit for a couple of minutes while the waffle iron preheats and you load the dishwasher. Use a measured disher and a digital timer to ensure consistent waffles.

    Last week husband said – we have eggs left over from Thanksgiving (buy a dozen as smallest can buy for two eggs for holiday dishes and eventually the rest are generally thrown out ), let’s have eggs for dinner.

    After we finished cooking them and stuff to eat with them and had eaten them – “boy that’s a lot of time for a little food”. Which is always the result of eggs for dinner.

    This year I am going to freeze the leftover eggs before they go bad and use them for Passover in the spring and then toss the leftover ones out.
