    I’ve made eggplant in some kind of pasta dish once… prepared it how it was supposed to be prepared, (I believe it involved slicing and salting and allowing the liquid to drain out of the eggplant) took a lot of time and care.

    I trusted the recipe because it was from a Food Network chef with quite a few recipes I had loved and turned out well.

    The gagging and retching that went around the table that night was a sight to behold! And it was not faked. Even I couldn’t shovel it down. I believe we did end up ordering pizza that night and the pasta went to the raccoons and other critters.

    Never purchased eggplant again.

    My mother would smother eggplant slices in corn meal, then fry them “to death”. Horrible. Her recipe for fish fillets was the same. I was in my late 20s before I discovered how fish (and eggplant) were supposed to taste. :) :(

    Eggplant gets a bum rap in my opinion. Mostly because many in the west don’t know how to properly prepare it. Like spinach if you don’t cook it right it can be distasteful by I suspect that Mom has a pretty good recipe and a casserole is a great why to use what is technically a large berry.

    You guys are NOT going to believe this, but my wife and I fixed Ratatouille (egg plant casserole) for dinner. We have never fixed this before, and have probably not eaten egg plant in 20 years. And we happen to have it the same day this cartoon comes out? What are the odds??
