Wow…story of my life. When I was young, I hated olives. Throughout my early adult years, I kept picking them off my pizza, until I got tired of it and just ate them. They grow on you. Now, when I go to Subway, I have them load them on. I’ll even make a sandwich of just ripe olives.
I’m still at one. Ah, well. I’m a fussy eater. Add food allergies, medication and illness interactions, and that means a rather restricted diet. At least I do well with lots of fruit and my favorite veggies.
I’ve always loved olives… my only quirk was that I didn’t want ones with pimentos. I can’t remember why I started doing it, but I always felt compelled to remove the pimentos. I did this until I realized it was just a quirk and found they tasted fine with them left in.
I really like olives but the cardiologist has me on a very limited salt intake. Some silliness about too much salt causing my heart to explode or something.
I love Greek and Italian food, but I simply can not bear the taste of Olives or Olive Oil. Even the “light” Olive Oil which is lighter in taste is something I dislike.
When used in the right amount in cookery it is usually not noticable or blends in nicely with the other flavours.
The Italian and Greek people are born and raised on it from a young age, but no matter how many times I try it, I still find it to be repugnant and have never been able to cultivate an appreciation for its flavour.
I don’t remember ever hating olives, but I sure like them a lot more now than when younger, and many more varieties on the market to choose from. I currently have about 6-8 varieties in the cupboard & fridge…spicy hot, types stuffed with jalapeno, blue cheese, anchovies, pimento (of course) onion & dried tomato, and lemon zest, last two are in a vermouth brine. Also Castelvetrano and kalamata olives, but never canned black olives.
I’ve always black olives on pizza. With green olives I’m still (barely) at stage 2, though I did crave just a couple one day. I don’t think the human lifespan, or any other lifespan, is enough to get me to stage 3.
I am the pickiest of eaters, and even I like olives. Also mushrooms. And coconut, two things most picky people won’t eat. Almost any seafood is fine with me also.

I have never liked green olives. I like black ones if cut up fine and sprinkled on something like a salad or burrito.
