Unfortunately some of our cheese happen to be Swiss, full of holes !

I’ve always kept my cheese in the refrigerator. Found out only last week that it should be at room temperature. Since then I have tried it with two types. A cheap Brie went from blandly bitter to rich and creamy while an almost tasteless Cheddar sprang to life — it makes all the difference in the world. Try it.

With my luck it would be Limburger.
