The psychiatrist must be thinking of kale. Nobody likes kale. Spinach, on the other hand, tastes great, just not the canned stuff that Popeye has to eat.
I have a good friend who LOVES that slimy glop that comes in a can but despises fresh spinach, raw# or steamed.
(#) Spinach is one of the many vegetables that should be eaten cooked rather than raw. Proper cooking releases the nutrients and renders veggies more digestible. Spinach (and some other greens) contain oxalates which can be injurious; they bind to calcium which precipitates calcium oxalate crystals and can lead to kidney stones. Probably the only veggies which are best eaten raw are onions, leeks, and garlic; cooking them destroys their beneficial micro-nutrient content.
I like Impossibly Easy Vegetable Pie (a Betty Crocker recipe) made with a pound of frozen spinach thawed and drained. I skip the green pepper and use very finely sliced onion plus some garlic powder.
Just barely cooked is best. Vitamins in spinach and a lot of other vegetables are released when lightly cooked but destroyed when overcooked. I can smell the difference, hate that overcooked taste and odor.
Last night, we went out to eat at our local choice for “Mexican” food. I got, as I usually do when there, the spinach and mushroom enchilada, with the added-cost option of “la crema” sauce instead of salsa verde. YUMMY! I’m not vegetarian, but when that’s what the best dish on the menu is, I’ll eat it with great pleasure! Spouse got their chicken enchilada “la crema” which is also good.

No, Spinach grown on you. As you get older, you lose the ability to taste bitter, so spinach starts to taste good.

I had spinach stuffed tortellini for supper last night. It was very good.
As others have been saying, it’s canned spinach that gives it a bad rep.

Swiss chard is easier to grow, Summer heat tolerant, cold resistant — and the rib stems can be used in place of celery for cooking.
