I had my first pizzas in the early 50s. At that time there was no choice in the toppings they served. You always got some anchovies which if you didn’t like them you had to pick out. I wonder how those anchovies would go with pineapple pizzas today?

If anchovy is a bit much for you, pineapple mellows it quite a bit. The style is called “Sicilian vacation in Hawaii”. And Canadians do not have bacon, A. They have nice little ham slices.

“Because anchovies thrive in salty water, it’s obvious they’re salty. To prevent their pungent salty taste, Italians combined the anchovies with cheese and tomatoes to create a Neapolitan pizza. That’s the original anchovy pizza, which may also be called Italian pizza.”

Try this, wafer thin crisp crust coated with cinnamon and sugar, spread with puréed strawberries, a layer of mixed fresh fruit, then hot fudge sauce and sweet cream drizzled over top.

So it’s not really pizza, but it stops the infernal pineapple arguing.

I don’t like pineapple on pizza, but I can look the other way while you eat it. Anchovies on the other hand, no, too gross and disgusting.

Pepperoni is the basic requirement for pizza. Real bacon and possibly a bit of onion are good as well, but pepperoni is what makes pizza pizza.

I live in Chicago where they do a lot of ground sausage clumps on pizza, which also struck me as strange when I moved here decades ago. I still don’t understand it.

I worked at a pizza joint in high school. When someone ordered a pizza with anchovies on it the kitchen staff drew straws. The medium straw had to take the pizza out of the oven and cut it, all the while getting a nose full of the stench. The poor sucker that drew the short straw had to make the pizza. Since this was before the practice of wearing food-handling gloves they would have to handle the anchovies with their bare shin. Their hands would reek of anchovies the rest of the night. No amount of washing would remove the odor. Even washing the dishes would not entirely remove the smell.

We hated it when someone ordered a pizza with anchovies.

Nothing wrong with a Hawaiian Pizza. Hell I’ve had Pizza with some truly odd topping that just worked. (Squid, Venison, Rabbit, Shredded Beef, Alligator, etc.) That being said the only Pizza I truly didn’t like was one I got by accident in Germany. Tuna Fish Pizza. (Think the Canned Tuna.) It just doesn’t work for me.

Now my favorite Pizzas are:Quatro Formagi with plenty of Garlic and Oregano on each layer.Home made, (I have one of the Ooni Ovens) a little Sauce, thin slices of either Peperoni or good Italian Sausage, some fresh Basil and then cover it with fresh grated Mozzarella. (You have to cover the Basil with the Cheese otherwise the Basil will char.)
