I adore carrot cake, but I have tragically developed a mild allergy to wheat recently. Finding gluten free baked goods that don’t taste like sawdust and sadness has been a challenge so far, and I am not brave, or rich, enough to try the wheat free flours in the store.
Carrot cake is okay, but you know what’s really great? Chocolate zucchini cake! I know it sounds like it shouldn’t work, but trust me it’s amazing. You don’t taste or see the zucchini but it makes the cake so moist and fluffy. It’s delicious.
My sister introduced me to it a few years ago and now I demand it every year for my birthday cake. I’ll admit I would have been hesitant to try it even though I’ve eaten zucchini in other things like stews or fritters before, but thankfully she had me taste the cake before revealing the key ingredient.

I have made a homemade, from scratch carrot cake before, because it’s my brother’s favorite and he needed a birthday cake. It is a LOT of work! Most carrot cakes since have been store bought, but I can say I’ve put in the effort to do it myself, and the cake came out rather well!
