Ah yes, Andy and her weird vegetarian dinners. Beetloaf, wheatmeal, turkey-flavored soy pastesâŠitâs no wonder the kids packed up and left when they saw that coming.
Hmm. A spinach salad with yams? Youâd probably want to roast the yams to keep them somewhat firm. Or, for a bit more effort, candied yams might work, though some recipes do get a bit mushy, they donât HAVE to be. Not sure what youâd combo with that or what sort of dressing youâd use, but it doesnât seem like a completely unworkable idea.
The Popeye movie with Robin Williams bombed, but it was probably the most accurate real life depiction of the Popeye character. Robin was an amazing actor in my book, and I still miss him.
Of all the myriad ways to serve spinach, she chooses only salad? Spinach souffle would have made a great entree or Tiropita ( greek egg and Spinach pie) as well.
Coincidentally, I consumed a homemade spinach salad just before reading this strip, partly because I like it and partly to atone for a quickie dinner at McDonaldâs tonight. But as the appetizer and the entree? A little too much, I think. She could have made spinach stuffed shells (which, as it happens, Iâll be making for dinner later in the week).
Iâm not a great fan of spinach, but I tried a recipe for a soup that included spinach, chickpeas, and leeks, simmered together and then blended. Very healthy, and amazingly tasty!
