Time to make corned beef hash! Good with some eggs on the side! Unhealthy as can be but a good way to make use of that leftover corned beef. My wife is not a big fan of corned beef so if I want to have some on the 17th I usually go to a nearby Irish pub which serves up a nice plate, normally to go, but yesterday we did sit down and have a couple of pints of Smithwicks while we watched a bit of the NCAA March Madness. I have read that first Thursday and Friday of March Madness results in an extremely high number of people calling in or planning ahead by burning a vacation day or 2….. This year you got 2 events on the same day. Another fact: the person who usually wins the office “pool” on picking winners is usually someone with zero knowledge of the sport, either just picking higher seeds, going with names of mascots or simply the team colors they like. All in all a fun diversion for the spring season.

2 to 3 tablespoons unsalted butter
1 medium onion, finely chopped (about 1 cup)
2 to 3 cups finely chopped, cooked corned beef
2 to 3 cups chopped cooked potatoes, preferably Yukon gold
Kosher salt and freshly ground black pepper
In a medium frying pan, saute’ the onions in butter until they are tender. Mix the potatoes and corned beef and then mix into the onions in the Pan. Pat the mixture flat with a spatula in the pan and cook until the edges appear crispy. Use the spatula to flip the hash and brown the other side. Put a serving in the middle of a plate and add an over-easy egg on the top.
Y’all. These things you like to make with corned beef is making me so hungry! There was a place my husband and I would go to in Houston called Victor’s Delicatessen and they had the best Ruebens and breakfast items. Pretty sure they are still there- off of FM 1960.How I wish I could go to a deli, diner, ANYWHERE! Then fry shredded cabbage (I buy coleslaw mix as a shortcut) in bacon grease with a little salt and sugar and serve with egg noodles (or potato dumplings, if you have more time than I do) and cut up the bacon and put it on the top or on the side. It is absolutely the most delicious thing imaginable, and I eat mounds of it. I only do this about once a year because I so pig out on it. This year I found some really nice egg noodles, with great flavor and texture.

I just boil a head of cabbage; then open a tin of corn beef, heat it up, and serve it on the cabbage leaves. Simple I know, but it works for me. ;)
